Food INtake January 2, 2012
Breakfast: Grapefruit. Susie gave me grapefruit spoons when I was pregnant with Quinn and craved citrus fruit like mad. I love using them and was super excited to eat my two halves, but then Lizzie sat down and eyed the bigger half and asked if I was “gonna eat that.” SO, breakfast: HALF a grapefruit, shot of espresso with milk.
Lunch: Steamed spinach with olive oil and salt. If you plan on putting spinach in a thermos to keep it warm, don’t bother. It did not work. I ate it cold, standing up, in front of a student who needed help with his essay.
One pear, which go too brown waiting for me to eat it.
Two slices of hand packed, raw mozerella cheese
Snack: greek yogurt with pomegranate and cherry, trail mix
Dinner: water with lemon and (pictured above) “Monday” dinner which means I threw whatever we had into one big pot. In this case:
grilled chicken breast tenders in olive oil
corn
spinach
kale
tomato
chiles
black beans
Penzey’s seafood spices
1/2 cup almond butter
Served over sushi grade brown rice with plum vinegar. SO good. Easy to adapt for Lizzie, too. Made a little sans meat casserole for her with the veggies.
Dessert: more espresso (oh, how I adore you Nespresso machine).

#One of the things i’ve learned recently (at my age) is …what we do for a living no longer defines us as individuals. Though having said that… there is an unseen reward in the “doing” itself.
